Today, he leads the Pastry program at Les Roseaux du Lac in Annecy, where his desserts stand out for their balance, precision, and artistic presentation. His creations, from basil-infused lemon tarts to seasonal entremets and modernized classics, reveal the finesse of a chef with a truly exceptional future ahead of him.

Recognized on national television and major Pastry competitions

Mickaël has earned recognition beyond the kitchen. He was a finalist in the prestigious pastry competition La Cerise sur le Gâteau, demonstrating his ability to perform under pressure at a national level.

He later competed on the acclaimed French TV show Le Meilleur Pâtissier: Les Professionnels (M6), the French equivalent of MasterChef, where elite pastry teams compete at the highest level. Together with his partner Amandine Troullier, Mickaël impressed viewers with his creativity, technique, and modern artistic style.

In December 2024, Mickaël was invited to take part in a signature pastry event in Annecy organized by Laurence Boris, founder of Pâtisserie Mon Amour with Fou de Pâtisserie, one of France’s leading pastry magazines.
